      Agreed. Just watching Foxy & Kim’s old videos and/or listening to their old stuff, just takes you back in time…..lol.

      No one will ever do it like them. I mean, don’t get me wrong. You have those who are good at what they do (Eve, Remy, Trina, etc.) and the ones who paved the way (Lyte, Latifah, Rage, etc.)….but I honestly think, Foxy & Kim are on a pedistal above all of them. They kicked the door in, during 96, and took the female rap game to awhole nother level. They ARE the BEST.

      It’s ALL GOOD. Try browning the meat, leaving it in the skillet, adding a whole stick of butter, let it melt, then add 1 cup of flour while stiring, a little at a time, then the milk. Start with a cup of milk, and slowly stir it in. He was right, stir constantly till done. After about 5 minutes, finish to your consistancy with more milk. Remember, DON’T LET IT BOIL, or you will need a sharp knife to get it out. A good simmer will do well. Good Luck.

      looks ok but I can make gravey to melt in your mouth and the secret is to let the gravey simmer for a short time.I use bacon grease then the flour then milk no back and fourth turns out great ever time.

      They are so cute together! I forgot how much fun it was to listen to Julia Child’s little side comments while she was cooking. You can tell Jacques Pepin respects her and likes her, she must be driving him a little bit crazy but he’s so nice about it!

      How fun is the exchange between them about the spinich!! I agree that pan cooked is a bit bitter, but he has a point about it being healthier. She never lets up on him about technique and he is such a gentleman about it all. I grew up channel surfing past her as a kid but loved the movie!

      Ever since I saw the movie I have been enchanted by Julia Child! I know my Mother watched her show when I was a little girl and I saw a few shows when I was older (reruns) but now i want to get her cookbook and try some french recipes. I am reading her book “My life in France” and it’s great. She lived a fascinating life!

      After I watch the TV shows and now the movie I make a beeline to the kitchen and start chopping onions…and what happens? I cook ! What an inspiration these two are, and always will be… Thanks to them both for inspiring so many to follow in their path not only professionally but in countless homes across the country.     Let’s Make Chiles Rellenos 

    Chiles Rellenos at Taqueria Mar Y Tierra

    Recipe Instructions:

    1. Rinse the chiles.
    2. Preheat your oven to broil.
    3. Place the chiles in a 9 x 14 baking dish and place on the top shelf of your oven.
    4. Watch and listen closely. When the skins start to make popping sounds and to char and turn black in places, take the chiles out and flip them over. Be sure and use a potholder so you don’t burn your hands!
    5. When both sides are fairly evenly charred, remove them from the oven.
    6. Wrap each chile in a moist paper towel or place in a sealed plastic bag to steam.
    7. After a few minutes, check them. Once the skin comes off easily, peel each chile.
    8. Cut a slit almost the full length of each chile. Make a small “t” across the top, by the stem. Pull out fibers and seeds (this is where the heat is) and replace with a slice of cheese. You can set these aside, for a few minutes or a few hours if you put them in the refrigerator.
    9. Whip the egg whites at high speed with an electric mixer, until stiff peaks have formed.
    10. Heat the oil in a skillet until a drop of water sizzles when dropped into the pan.
    11. Beat the egg yolks with one tablespoon flour and salt. Mix the yolks into egg whites and stir until you have a thick paste.
    12. Roll the chiles in 1/4 cup flour and dip each one in the egg batter. Coat evenly. Fry, seam side down on both sides until golden brown. Place on paper towels to drain.
    13. Meanwhile, heat the salsa in a medium saucepan (either one or some of each). Place one or two Rellenos on each plate and pour salsa over them. Serve them immediately and brace yourself for major compliments!

    Make Some “New Orleans-Style” Gumbo For Dinner 

    Rice with shrimp gumbo. * <a href=http://pdphoto.org/P..." title="Rice with shrimp gumbo. * http://pdphoto.org/P..." width="300" height="225">

    * 3 tablespoons of vegetable oil
    * 3 tablespoons of flour
    * l large chopped onion
    * 1 cup chopped celery
    * 5 or 6 cloves, chopped garlic
    * 1 cup of chopped green pepper
    * 1 can of tomato sauce
    * 1 can of tomatoes (”Rotel” tomatoes for a spicier taste!)
    * 1 pound, fresh sliced okra (or 2 boxes of frozen sliced okra)
    * 2 pounds of fresh shrimp
    * 2 – 3 cups water
    * salt & pepper to taste
    * 1 teaspoon of sugar
    * 1 tablespoon of chopped parsley
    * 1 bay leaf

    For seafood gumbo, add to the above:

    * 1 small can of crabmeat or 3 fresh gumbo crabs
    * 1 jar oysters

    * Slowly stir the flour into heated oil in a heavy cast iron skillet. Continue to stir until the flour is dark brown. Add the next 4 ingredients; stir until onions are clear.
    * Add tomato sauce. Stir until it gets crumbly or dry. Fry okra in another skillet until it is no longer sticky or stringy. Add tomatoes and fried okra.
    * Cook slowly, adding 2 to 3 cups of water–a little at a time. Season with salt and pepper to taste. Stir in one teaspoon of sugar.
    * Cook for about an hour on a low fire, stirring occasionally to prevent sticking to the bottom of pot; adding water if necessary. Add the shrimp and the bay leaf (and if desired, the oysters and crabmeat).
    * Cook another 30 minutes to an hour, adding seasoning to taste.
    * Serve over boiled or steamed rice.
