韭菜盒子(下) (Step by Step食譜)
【材料】：韭菜5兩、蝦皮2大匙、絞肉4兩、粉絲1把、麵粉3杯、醬油1小匙、香油1小匙、鹽半小匙、胡椒粉半小匙【做法】： 1、把3杯的中筋麵粉加入1杯熱開水，快速攪拌後再加入半杯冷水揉成麵糰。放置一旁醒20~30分鐘。 2、絞肉中放入醬油、麻油、胡椒粉調味拌勻，再加入蝦皮、粉絲、韭菜、沙拉油、香油拌成餡料。 3、將醒好的麵糰切小塊、壓成圓形成外皮後，再填入餡料、對摺成半月形，再用盤緣壓線除去外餘的麵皮後，再捏花邊入熱鍋乾烙至熟即完成「韭菜盒子」。
